The domain respects the charter of Bio-Advanced: a global approach related to the production, the transformation, the management and the distribution of the wine with the aim of seeking the most respectful techniques of the identity of the soil and its environment, and so as to provide to our customers a typical, single and perennial product. Everything at the estate is done to cultivate the vines and to have grapes of the highest quality, in order to elaborate wines of international renown.

We have replanted our vines with rosaceae, peach tree type, and buxaceae, box tree type, in order to recreate a habitat for auxiliary fauna. The very important choice of our rootstocks will influence the biological properties of the soils. The summer and winter ploughing is practiced to have living soils: the roots must therefore go down into the soil to extract the essence. 

In terms of oenology, we strive to use oxidation protection techniques on ripe, healthy grapes, using a minimum of sulfur and intervening as little as possible so as not to disturb the terroir of origin: careful harvesting, vinified in thermo-regulated vats and maturing in 228-liter new oak barrels in our stone cellars are all assets to allow our wines to ennoble themselves in your cellars. From a multitude of small details are born the great wines... 

Harvesting at home or by machine: two different methods that we use in a complementary way on our plots. The control of the date of the harvest is nowadays an absolute priority for the elaboration of great wines. The Burgundian plot of land, which is very fragmented, at different altitudes and planted several years apart, makes it difficult for us to obtain homogenous maturities; the machine is therefore adequate for this implementation. The freedom to go out to harvest when the maturity of the fruit requires it, the flexibility to stop harvesting and start again a few days later, to be able to wait for better climatic conditions, these are all advantages that the harvesting machine allows us. The machine alone is not a guarantee of quality, it is all the work that goes into making the quality of the harvest.
